What’s for dinner?! 😄 . Cauliflower Alfredo Sauce over Chickpea Penne Pasta 😋 . INGREDIENTS • small head of cauliflower (or 1/2 of a large) • 1 small onion • garlic (I don’t specify an amount because I always over use what recipes call for; use as much as your little heart desires) • 3/4 c almond milk • tbs lemon juice • tsp sea or pink salt • 1/4 tsp of black pepper • avocado or olive oil • 2 tbsp roughly chopped fresh parsley, to serve • chickpea pasta (or any other pasta or noodles you’d like) . HOW TO Place the cauliflower florets in a steamer over a pot of boiling water. Cover with a lid and steam for 5-10 minutes, until tender. In a small pan, add the oil, onion, & garlic cook for 5 minutes or so, until translucent. . Place the cooked cauliflower, onion and garlic in a blender and add the unsweetened almond milk, lemon juice, sea salt and black pepper. Blend until smooth. Boil pasta in salted boiling water until al dente. Pour the sauce over the pasta and mix well. My version of Bibimbap is EGGCELLENT and includes crispy and fluffy @cecesveggieco cauli rice, lots of fresh veggies like shredded carrots and spiralized zucchini, pasture raised ground pork sautéed with @coconutsecretofficial Coconut Aminos, paleo sriracha, @bayareabeecompany honey, sesame seeds, and sesame oil, and a crispy fried @vitalfarms egg on top. If you’re vegetarian sub the pork with crumbled tofu or other veggie based protein. . . This has tons of flavor, is made in just 30 minutes, and is packed with veggies and protein! Butttt this was actually really good, all it is is some canned black beans, a quinoa blend I bought from Publix, and some Mexican street style corn that I also got from Publix! (I forgot to take a pic of the corn but there is a pic of the quinoa medley I used) This was surprisingly really good and only took like literally 6 minutes to make!
