Time for another easy recipe! A simple post-workout dinner that's high in carbs and protein. This is pretty versatile, since you can either cook this in some vegetable broth, bake everything and throw it together, or add oil and stir-fry it. 𝙄𝙉𝙂𝙍𝙀𝘿𝙄𝙀𝙉𝙏𝙎 •12oz extra firm tofu •1 green pepper •3 taters •8 mushrooms (i used baby Bella, shiitake and Woodear are great too) Here's what I did: •Sliced the tofu into thin rectangles, tossed nutritional yeast, garlic powder, soy sauce and paprika over and baked @ 425° 30mins •baked my potatoes (425° 30 mins w/ the tofu) •added just 1/2 cup of veggie broth and cooked up my mushrooms for 7 mins, •peppers for 5 •threw the tofu and potatoes in with the rest and let simmer for a few mins And promptly Chomped it up! 𝘽𝙀𝙉𝙀𝙁𝙄𝙏𝙎 •starches from potato combined with complex carbs& fiber from pepper & mushrooms for a fast and slow release of glucose. •tofu is a complete protein •68%DV calcium •577%DV vitamin C •3,288 mg potassium 𝙈𝙪𝙨𝙝𝙧𝙤𝙤𝙢𝙨 𝙖𝙧𝙚 𝙤𝙛𝙩𝙚𝙣 𝙪𝙣𝙙𝙚𝙧𝙖𝙥𝙥𝙧𝙚𝙘𝙞𝙖𝙩𝙚𝙙 𝙞𝙣 𝙥𝙤𝙨𝙩-𝙬𝙤𝙧𝙠𝙤𝙪𝙩 𝙢𝙚𝙖𝙡𝙨. Let me talk a min about the importance of keeping yourself busy in terms of weight loss goals/overeating. If you’re like me when you’re bored you can snack until the cows come home. Nothing sabotages me quite like sitting around doing nothing can. I can eat even if I’m not hungry when I’m bored or not focused on specific tasks. Currently ya girl has quite a bit of free time on her hands. I’m pretty sure in the last couple of weeks my phone usage and snacking has gone up tremendously (like some serious positive correlations graph wise), so finding other things to do has been really important. You’d never guess what I’ve been doing... Watercolour painting! Yeah, it’s not specifically gym or diet related. I’m not avoiding snacking by doing 20 squats every time I crave a chip. But I am filling my time with a hobby, doing something that I can be so focused on that I don’t even think to reach for that snack in the first place. This morning I even painted while eating breakfast and I ate 10x slower than I would compared to if I were watching a YouTube video while eating (speed eaters unite). So dust off that hobby you’ve put aside just because it isn’t health and fitness related, because it might just help you in more ways than you think ❤️ watercolour painting has also been a great therapy for me as well. 🍆 ANTIPASTI 🍆 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ✌️Endlich seit laaanger Zeit wieder Antipasti vorbereitet zum Naschen und als Beilage für die nächsten Tage ✌️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⚠️ Je länger dein eingelegte Gemüse halten soll, desto steriler muss das Gefäß sein und desto mehr Essig sollte drin sein, denn Essig konserviert das Ganze schön wenn kühl gelagert ⚠️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 😂 Bei mir hält sowas nicht Monate... Wenn ich das heute vorbereite, möchte ich es am liebsten spätestens morgen genießen, aber eine Nacht sollte es für den Geschmack schon durchziehen 😂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👍Ich habe heute das genommen was da war: Knoblauch, Zucchini, Karotte und Aubergine aber bei Antipasti muss man auch einfach ausprobieren was einem am Meisten schmeckt. Denkbar sind ebenfalls Paprika, chili Schoten, Zwiebeln, Rettich, Rote Beete, Pilze etc... This soup, inspired by @soppahanna, is full of flavor and the texture is so smoooth and that is why I love it so much 🧡⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 butternut squash⠀⠀⠀⠀⠀⠀⠀⠀⠀ a splash of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀ salt & pepper to taste⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 onion, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 red pepper, diced⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 cloves of garlic, diced fresh ginger, grated⠀⠀⠀⠀⠀⠀⠀⠀⠀ ½ thyme ⠀⠀⠀⠀⠀⠀⠀⠀⠀ sprinkle of chili flakes ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 tsp gingerbread spice mix (ginger, sour orange, clove, ginger)⠀⠀⠀ 1 tsp turmeric⠀⠀⠀⠀⠀⠀ 1 dl coconut cream⠀⠀⠀⠀⠀⠀⠀⠀⠀ 5 dl vegetable stock⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ coconut cream, sunflower seeds and coriander on top⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Peel and chop the butternut squash. Spread the chunks out onto a baking sheet in a single layer and rub with olive oil. Add salt & pepper and roast in 225 degrees until soft.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Add diced garlic cloves, onion and bell pepper to a large pan with olive oil. Cook until softened. Add rest of the ingredients including the roasted butternut squash chunks. Use an immersion blender or food processor and blend until smooth. Add more broth or spiced if necessary. RECIPE: Vegan and gluten free mint chocolate puddings 🌱🌱🌱⁣ ⁣ Made these puddings for when my non free from friend came for dinner and she loved them! ⁣ ⁣ They’re also a reasonably healthy choice if you’re getting a bit sick of all the festive chocolates and mince pies. ⁣ ⁣ Let me know if you make them 🖤⁣ ⁣ ⁣ ⁣ Ingredients: ⁣ 1 tin of coconut milk (for best results, place in the fridge the night before) ⁣ 10 dates ⁣ 1/2 cup cocao powder ⁣ 1/2 cup coconut sugar (for the top)⁣ 1/4 cup coconut sugar (for the base) ⁣ 2 tea spoons of mint extract⁣ 1 cup of ground flax seed ⁣ 1 cup of ground almond⁣ 1/2 cup cocoa nibs ⁣ 1/2 cup melted coconut oil⁣ Fresh mint for decoration ⁣ 6 ramekins ⁣ ⁣ Base: ⁣ • Mix flax seed, ground almonds, cocao nibs, sugar and coconut oil together in a bowl. ⁣ • Spoon this mix into the bottom of the ramekins making sure to press down firmly. ⁣ • Place the bases to cook for 10 mins on 180 degrees. ⁣ • Take out and leave to cool ⁣ ⁣ Top:⁣ • Add dates and coconut milk in a food processor and blend until mixed together. ⁣ • Add cocao, sugar and mint extract and blend again ⁣ ⁣ Adding together: ⁣ • Ensuring the base is fully cool, pour the topping mix into the ramekins. ⁣ • Place in the freezer for 4-6 hours⁣ • Remove an hour before serving to ensure it’s thawed. ⁣ • Add mint leaves to garnish. ⁣ ⁣ ⁣ ⁣ #veganrecipes #healthydesserts #veganglutenfree #glutenfreevegan#mintchocolatechip #veganpudding #easyrecipes #healthyrecipes #healthyfoodrecipes #coconutbased#plantbased #plantbasedfoodie #plantbasedrecipes #plantbasedrecipes#dairyfreerecipes #dairyfreefood #veganfoodshare ⁣ ⁣ ⁣

And gravy hehe ) As you can see though, I couldn’t wait until Christmas Day to use the gravy so I made myself some sausages + mash absolutely drowned it in the stuff 😂🤦🏻‍♀️ - 🌟 For the mashed potato 🌟 1️⃣ wash and peel however many potatoes you like (I used around 5 small ish ones) 2️⃣ microwave them for 4 to 5 minutes until soft 3️⃣ mash them up with a potato masher 4️⃣ stir in a tsp of mustard, 1tbsp nutritional yeast, salt and pepper and some oat milk to get it to the desired consistency - - What’s your favourite meal to have? For me, this plate was definitely up there on my top 5 list 🙈

The burger is so delicious and the expanded efforts to provide vegan options is slowly convincing me to pick up a commuter meal plan next semester. It honestly tastes better than the regular burgers and a million times better than the vegan patties! Some suggestion for CDS, please make the Beyond burger the standard every day of the week, provide vegan cheese for the burgers, and expand the beyond burger and daiya cheese pizza to Lenoir!! I read a report this morning which assessed the lifecycle of certain foods. Turns out tomatoes from the UK ain't so great... in winter. It is more resource-intensive to grow tomatoes in the UK in greenhouses than it is to grow them outdoors in Southern Europe and ship them here. It's hard not to feel guilty about our food choices, as it feels like something we have a lot of control over. But until the industry changes, we are prisoners of the system!
