Another salad kinda day. I've been craving salads lately. Homemade croutons, lightly sautéed broccoli, tofu and cauliflower, carrots, red cabbage, green onion, romaine and spring mix, topped with balsamic dressing. As you can see with the picture progression, I enjoyed every bite.
So while I’ve been away I have been enjoying my food to the fullest as the range of gluten free stuff is 100 times more and better then back home.
So today I fancied a burger and they have a gluten free cheeseburger but serve it with a salad with vinaigrette and olive oil on the side. I ordered fries too because who can have a burger without fries? Super impressed.

My favorite fruit salad! Perfectly right and refreshing with a beautiful combination of colors. This is the perfect summer side dish for cookouts or holiday parties. You can switch of the fruits listed here for others you may have on hand.
1 lb fresh strawberries, chopped
1 lb chopped fresh pineapple,
12 oz fresh blueberries
12 oz red grapes, sliced into halves
4 kiwis, peeled and chopped
3 mandarin oranges*
2 bananas, sliced (optional)
Honey Lime Dressing
1/4 cup honey
2 tsp lime zest (zest of 2 medium limes)
1 1/2 Tbsp fresh lime juice
Add all fruit to a large mixing bowl.
In a small mixing bowl, whisk together they honey, lime zest and lime juice.
Pour over fruit and toss to evenly coat, serve immediately**. Recipe Notes
*1 (15 oz) can mandarin oranges in juice or light syrup, drained well will work here too (which was what was previously listed, I just now prefer the fresh).
**Fruit can be chopped 1 day in advance (except banana) and dressing can be made 1 day in advance and kept separate and chilled, toss together just before serving.

Not everything is as it seems 😛
This was a yummy salad (super duper easy and CHEAP 😅) - lettuce - 1/4 cucumber - can tuna
- 1/4 avo (only coz it's all I had left) 💔
- seasoned with black pepper and tiny bit salt 😋
Despite crawling to month end, I decided to not let mid-month change my goals and decided to buy cheap, simple ingredients that will carry me this week 😅 so basically, I'm forced to have salad for lunch coz I dont have a choice. Adulting 101 😑
Also, people will only show u what they want u to see. In the spirit of honesty & showing that a lifestyle is a journey & not a destination, my mid-morning packet of chips made it to the 'gram 🤣.. no one is perfect, so don't feel bad about not eating healthy 100% of the time. Aim for a healthy 80/20 balance daily. Create a life you can maintain ♡

I am happier this week, I have gained more weight and I’m proud to say that I’m my healthiest in a while. Each time I gain, my mindset becomes clearer, my mood improves and my family and friends say I glow and look more radiant😚
I am going to Spain in a week, after my party !! And results day ahhh.
I got my lashes done today, did a face mask, and saw my best friend which was so nice, then had homemade pizza with my mum 🥰
I’m taking it one day at a time, learning to control my anxiety, having weekly therapy while gaining health and fighting so so so hard.
I know I am stronger than this, and so are you❤️❤️
