This healthy cashew chicken is seriously so dang easy to make, and yet it’s so satisfying and really hits the spot when I want Asian food or takeout! So basically, you should plan to make it this week! ;) ⁣ ⁣ Ingredients⁣ 1.5 lbs chicken breast or thighs, cut into 1" cubes⁣ 1/4 cup tapioca starch⁣ 1 tsp sea salt⁣ 1 tsp ground black pepper⁣ 2 tbsp avocado oil, divided⁣ ⁣ For the sauce:⁣ 1/4 cup coconut aminos⁣ 1/4 cup water⁣ 1 tsp sesame oil⁣ 2 inches fresh ginger, minced or grated on a microplane (about 1 tbsp)⁣ 4 cloves garlic, minced (or sub 1 tbsp garlic oil)⁣ ⁣ For the rest:⁣ 6 cups cauliflower, riced⁣ 2 cups broccoli florets⁣ 1 red bell pepper, chopped⁣ 4 green onions, chopped into 1" pieces⁣ 3/4 cup roasted cashews, unsalted⁣ ⁣ Instructions⁣ 1- Make sauce by whisking together all the sauce ingredients in a bowl or jar and set aside. ⁣ 2- Prep all chicken and veggies as noted and set aside. ⁣ 3- Place tapioca starch, salt and pepper in a bowl. Mix with a fork or whisk. Add cubed chicken to bowl and toss to coat. ⁣ 4- In a large skillet, add avocado oil and heat to medium heat. Once hot, add chicken to pan and cook, stirring occasionally until chicken is almost cooked through. ⁣ 5- Add sauce, broccoli, bell pepper, onion and cashews to pan. Stir to coat and turn heat down to low. Continue to cook while you make your cauliflower rice. ⁣ 6- In a separate pan over medium heat, add 1 tbsp avocado oil and cauliflower rice. Cook until cauliflower softens and heats through, about 5 minutes. Season with salt and pepper, to taste. ⁣ 𝟕- Put it all together – add cauliflower rice to a bowl and top with the cashew chicken. Re-made my paleo chocolate chip cookies for a girls night 🍪🍷| if you haven’t made these yet, you need to ASAP | dairy free, gluten free, and stay soft for days | macros and recipe below⬇️ MACROS: C=14g; P=5g; F=18g INGREDIENTS (makes about 12 cookies): • 1 1/2 cups blanched almond flour (I used @bobsredmill) • 3/4 cup @enjoylifefoods mini chocolate chips • 1/4 cup refined coconut oil • 1/4 cup organic maple syrup • 1/2 tsp salt • 1/2 tsp baking soda • 1/2 tsp organic vanilla extract • 1 egg DIRECTIONS: • preheat oven to 375°F • combine almond flour, salt and baking soda in a medium size mixing bowl • in a small mixing bowl, combine maple syrup, vanilla extract and the egg and beat with an electric hand mixer • pour wet ingredients into the dry ingredients and mix well • melt coconut oil, pour into batter, and continue to mix until well combined • stir in chocolate chips • line a baking sheet with parchment paper and form balls of cookie dough, about 1 tablespoon in size • bake for 13-15 minutes • remove from oven and transfer to cooling rack • enjoy Tip: My mother-in-law made these but halved the size of each cookie to make 24 mini cookies and they were SO good

It was hard for me to find healthy alternatives to my favorite snacks which led me to just binging a bag of chips or brownie brittle 🙈 this transition to a healthier lifestyle hasn’t been easy but it’s all about a learning curve. I think we often beat ourselves up if we fall off track but I’ve learned recently it’s important to just embrace the journey 💓 it’s more about the progress than the perfection. Impossible Foods admits that consumers could experience adverse reactions to its lab grown burger but it could be any number of ingredients so....don't blame the GMO soy!🤦🏻‍♂️ The process of creating this "heme" is downright scary, including taking the genes that code for soy leghemoglobin protein, inserting them into a species of yeast(Pichia pastoris) and then feeding the genetically modified yeast sugar and minerals so that they grow, replicate and manufacture the heme. 🤢 sounds deeelicious! Even if you prefer veggie burgers over meat don't you want to know how safe this food is? Too many times throughout history this has happened. What good is the FDA if all they do is react?! And since Im currently being carb conscious, zucchini noodles with baked Parmesan pork tenderloin and some of my moms home made sauce with extra Parmesan on top, this meal def hit the spot! Now don’t get me wrong I enjoy eating normal pasta and I have nothing against it, and yes I could choose chick pea option or any other alternatives, but since I know my body if I cut the carbs slightly, my body responds well, so I have another 9 days of this and that’s it! Key in sticking to a lifestyle is learning to love all types of meals. If you followed me long enough you will come to a conclusion that I eat all types of foods, from vegan , to donuts, to pizza, to all you can eat sushi, to cake , to all you can eat meat, to zoodles and grilled mushrooms! My taste pallets have expended and I love it!

💯💚 By @foodikos Follow us for more Beauty and Health.⁠ ⁠ Spicy Vegan Steamed Dumplings⁠ -⁠ ⁠ Credit @woon.heng 🌱🔥 -⁠ ⁠ Little plant-based pockets of goodness! ⁠ Recipe⁠ Ingredients:⁠ ~ 2 lbs of bok choy, washed and julienned⁠ ~ 1 package of wonton/dumpling wrapper⁠ ~ 1 box of firm tofu, drained & mashed⁠ ~ 1/4 cup of saute mushrooms⁠ ~ 1 tablespoon black bean sauce⁠ ~ 1 tablespoon corn starch⁠ ~ salt to taste⁠ ~ oil⁠ Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):⁠ ~ 3 tablespoons soy sauce⁠ ~ 2 tablespoon chili oil with chili crumbs⁠ ~ 1 tablespoon sesame oil⁠ ~ 1 teaspoon Chinese black vinegar⁠ ~ 1 teaspoon grated ginger⁠ ~ 1 teaspoon sugar⁠ ⁠ Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.⁠ ⁠ Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, cornstarch, combine well & season if needed.⁠ ⁠ Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. Today was our schools Book week parade. My morning was super hectic as I was parent helper for my youngest child so I had to get dressed up with the kids too 🙂 I was craving something sweet this afternoon so I decided to make these lemon balls. These balls are delicious and are perfect as an afternoon pick me up and are suitable for school lunch boxes. . Lemon balls (gluten free, paleo, AIP friendly, nut free) . Ingredients ½ cup sultanas ½ cup Medjool dates, pitted 1½ cup desiccated coconut, plus extra for rolling ½ teaspoon vanilla powder Zest of 1 lemon 1½ Tbsp freshly squeezed lemon juice . Method Place all the ingredients into a high speed blender or Thermomix and blend until the mixture starts to stick together. This may involve stopping the machine and scraping down the sides of the blender. . Pop a generous spoonful or two of desiccated coconut into a bowl for rolling. . With clean hands and using a tablespoon as a measure, roll a spoonful of the mixture into ball and carefully roll in coconut to cover. . Repeat until all the mixture has been rolled. . Place balls into a sealed container in the fridge until needed. Makes 12 balls
