This healthy cashew chicken is seriously so dang easy to make, and yet it’s so satisfying and really hits the spot when I want Asian food or takeout! So basically, you should plan to make it this week! ;)
1.5 lbs chicken breast or thighs, cut into 1" cubes
1/4 cup tapioca starch
1 tsp sea salt
1 tsp ground black pepper
2 tbsp avocado oil, divided
For the sauce:
1/4 cup coconut aminos
1/4 cup water
1 tsp sesame oil
2 inches fresh ginger, minced or grated on a microplane (about 1 tbsp)
4 cloves garlic, minced (or sub 1 tbsp garlic oil)
For the rest:
6 cups cauliflower, riced
2 cups broccoli florets
1 red bell pepper, chopped
4 green onions, chopped into 1" pieces
3/4 cup roasted cashews, unsalted
1- Make sauce by whisking together all the sauce ingredients in a bowl or jar and set aside.
2- Prep all chicken and veggies as noted and set aside.
3- Place tapioca starch, salt and pepper in a bowl. Mix with a fork or whisk. Add cubed chicken to bowl and toss to coat.
4- In a large skillet, add avocado oil and heat to medium heat. Once hot, add chicken to pan and cook, stirring occasionally until chicken is almost cooked through.
5- Add sauce, broccoli, bell pepper, onion and cashews to pan. Stir to coat and turn heat down to low. Continue to cook while you make your cauliflower rice.
6- In a separate pan over medium heat, add 1 tbsp avocado oil and cauliflower rice. Cook until cauliflower softens and heats through, about 5 minutes. Season with salt and pepper, to taste.
𝟕- Put it all together – add cauliflower rice to a bowl and top with the cashew chicken. Enjoy!

Every week I leave the kitchen with a favorite meal and I was surprised that last week this meal was the winner! A simple shrimp stir fry, but man those shrimp and veggies packed a ton of flavor. We used wild caught shrimp, of course, and organic veggies stir fried just perfectly so they didn’t get soggy throughout the week. This is a perfect low carb meal.

Here's an easy way to enjoy my new Buffalo seasoning. Simply add it to a compound butter for your steak dinner😍👍
1. Heat your skillet on high heat until very hot. Mine is from @finexcookware.
2. In a small bowl, add butter, Blue cheese, Himalayan Pink Salt and Pepper, and Buffalo seasoning. Mix thoroughly.
3. Brush canola oil onto skillet and onto both sides of the steak. Season steak with my Himalayan Pink Salt and Pepper.
4. Grill steak for 3-4 min on each side for medium rare.
5. Apply Buffalo Blue Cheese Butter on steak as it finishes cooking. **hand torch is optional 😎👍
6. Serve steak with your favorite sides and enjoy ‼

Re-made my paleo chocolate chip cookies for a girls night 🍪🍷| if you haven’t made these yet, you need to ASAP | dairy free, gluten free, and stay soft for days | macros and recipe below⬇️ MACROS: C=14g; P=5g; F=18g
INGREDIENTS (makes about 12 cookies):
• 1 1/2 cups blanched almond flour (I used @bobsredmill)
• 3/4 cup @enjoylifefoods mini chocolate chips
• 1/4 cup refined coconut oil
• 1/4 cup organic maple syrup
• 1/2 tsp salt
• 1/2 tsp baking soda
• 1/2 tsp organic vanilla extract
• 1 egg
• preheat oven to 375°F • combine almond flour, salt and baking soda in a medium size mixing bowl • in a small mixing bowl, combine maple syrup, vanilla extract and the egg and beat with an electric hand mixer • pour wet ingredients into the dry ingredients and mix well • melt coconut oil, pour into batter, and continue to mix until well combined • stir in chocolate chips • line a baking sheet with parchment paper and form balls of cookie dough, about 1 tablespoon in size • bake for 13-15 minutes • remove from oven and transfer to cooling rack • enjoy
Tip: My mother-in-law made these but halved the size of each cookie to make 24 mini cookies and they were SO good

Time to take action and here's why... The Impossible Burger contains a GMO ingredient called soy leghemoglobin which the FDA should have regulated as a food additive...but didn't!
Impossible Foods admits that consumers could experience adverse reactions to its lab grown burger but it could be any number of ingredients so....don't blame the GMO soy!🤦🏻♂️ The process of creating this "heme" is downright scary, including taking the genes that code for soy leghemoglobin protein, inserting them into a species of yeast(Pichia pastoris) and then feeding the genetically modified yeast sugar and minerals so that they grow, replicate and manufacture the heme. 🤢 sounds deeelicious!
Even if you prefer veggie burgers over meat don't you want to know how safe this food is? Too many times throughout history this has happened. What good is the FDA if all they do is react?! We all need to be proactive and demand transparency.
Full disclosure, I would NEVER recommend or consume one of these highly processed fake foods but even more importantly if you do, take action. Your life literally could depend on it!

I’m a sucker for my moms home made pasta sauce/gravy! And since Im currently being carb conscious, zucchini noodles with baked Parmesan pork tenderloin and some of my moms home made sauce with extra Parmesan on top, this meal def hit the spot! Now don’t get me wrong I enjoy eating normal pasta and I have nothing against it, and yes I could choose chick pea option or any other alternatives, but since I know my body if I cut the carbs slightly, my body responds well, so I have another 9 days of this and that’s it! Key in sticking to a lifestyle is learning to love all types of meals. If you followed me long enough you will come to a conclusion that I eat all types of foods, from vegan , to donuts, to pizza, to all you can eat sushi, to cake , to all you can eat meat, to zoodles and grilled mushrooms! My taste pallets have expended and I love it!
When my son was small, I made "roly-poly pudding"—a reference to a Beatrix Potter story—when he was sad. Everyone's happy here, so this is a variation on that theme. I used almond flour instead of wheat flour, made it vegan and cut it into pinwheels for easy serving. Spicy Vegan Steamed Dumplings

Little plant-based pockets of goodness!
~ 2 lbs of bok choy, washed and julienned
~ 1 package of wonton/dumpling wrapper
~ 1 box of firm tofu, drained & mashed
~ 1/4 cup of saute mushrooms
~ 1 tablespoon black bean sauce
~ 1 tablespoon corn starch
~ salt to taste
Spicy sauce (whisk all ingredients in a bowl until sugar dissolves):
~ 3 tablespoons soy sauce
~ 2 tablespoon chili oil with chili crumbs
~ 1 tablespoon sesame oil
~ 1 teaspoon Chinese black vinegar
~ 1 teaspoon grated ginger
~ 1 teaspoon sugar
Place julienned bok choy in a large bowl with 2 tsp salt, using your hands, gently massage salt into veggies. Set aside for 15-20mins. In a heated pan with 1 tsp oil, sauté mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry mashed tofu for 2 minutes (or until brown), season with salt. Place both ingredients in a big bowl.
Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add tofu mixture, cornstarch, combine well & season if needed.
Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Place wontons on a steamer basket and steam for 15mins in high heat. Remove and serve warm with spicy sauce. You can serve sauce on the side or as pictured.

Today was our schools Book week parade. My morning was super hectic as I was parent helper for my youngest child so I had to get dressed up with the kids too 🙂
I was craving something sweet this afternoon so I decided to make these lemon balls. These balls are delicious and are perfect as an afternoon pick me up and are suitable for school lunch boxes.
Lemon balls (gluten free, paleo, AIP friendly, nut free)
½ cup sultanas
½ cup Medjool dates, pitted
1½ cup desiccated coconut, plus extra for rolling
½ teaspoon vanilla powder
Zest of 1 lemon
1½ Tbsp freshly squeezed lemon juice
Place all the ingredients into a high speed blender or Thermomix and blend until the mixture starts to stick together. This may involve stopping the machine and scraping down the sides of the blender.
Pop a generous spoonful or two of desiccated coconut into a bowl for rolling.
With clean hands and using a tablespoon as a measure, roll a spoonful of the mixture into ball and carefully roll in coconut to cover.
Repeat until all the mixture has been rolled.
Place balls into a sealed container in the fridge until needed.
Makes 12 balls
