ONE PAN PAD THAI. 🌶 .
I took a traditional pad Thai recipe from a recipe I found on Pinterest (link added below) and put my twist on it by using spaghetti squash and shrimp instead of chicken.
Caramelized Banana Gluten Free Pancakes **Recipe Below** Ingredients: - 5 eggs
- 3 carmelized bananas - 1/3 teaspoon baking soda
- 1/3-2/3 cup water (depends on consistency of batter)
- 1/3 teaspoon of ceylon cinnamon - 5 tablespoons of coconut flour - coconut oil for frying
1) Add wet ingredients to @vitamix , blend, then fold in dry ingredients
2) Use tablespoon to place batter onto pre-heated skillet with coconut oil on low to medium heat
3) Wait till bubbles form at top, then flip, ready when color is golden

Leftovers are the best when you can simply throw me a few other simple ingredients to elevate them! Last night's Jamaican jerk pork chops and brown rice and peas were given some new life with a delicious fried egg and sautéed spinach today
Kick start your workweek with a nutritious and lowcarb breakfast with lots of fruits and colors...here, I have some gluten-free waffles topped with homemade almond butter and bananas and homemade chocolate hazelnut spread and strawberries...don't forget some chia seeds and toasted coconut for added texture and goodness! A "pina colada" smoothie provides this meal with even more yumminess!
Since I didn't get a chance to sample any of the banana oat muffins I made for the potluck yesterday 😕, I thought I'd make a banana loaf for breakfast this morning. This is my usual go-to recipe, except I always swap out the cup of white sugar for 1/2 cup of cane sugar, honey or agave..I find the ripe bananas already add quite a bit of sweetness 😆 By the way, I sometimes replace the 125g of butter with peanut or almond butter as well, for a whole other level of yumminess! 😝

Gave my friend a mini cooking lesson today...although she claims she is "allergic" to the kitchen, she managed to make this simple, yet, delicious, herbed chicken breast with steamed coconut rice (with some supervision and minimum intervention, may I add...lol)
Grilled chicken souvlaki with a side of quinoa and homemade tzatziki for a simple and healthy dinner tonight....finished it in record time (20 minutes), so I may proceed to dessert: mango strawberry chia pudding (see previous post for pic) 😋😝😜
