As a bartender my self worth is heavily based on my creativity and ability to meld flavors together. But I’m also acutely aware that to blend those flavors together I have to make a conscious decision about cost (people in this country aren’t ready to pay 20-30 per cocktail yet...). In past bars I have worked for had to make those choices at the sacrifice of real and genuine products. Thankfully at @botanistbarpdx I don’t have to make that choice anymore. I can puff out my chest and choose to serve wine, spirits, and ingredients that I have faith and knowledge to the authenticity of their ingredients. We choose to serve Cremant de Limoux sparkling wine over others because I know for a fact they don’t use harmful pesticides (common Prosecco, let’s step up your game already...) or forced carbonation through machines. These sparkling wines predate champagne and use some of the same grapes as champagne as well as the exact same method to make them. They are authentic, real and amazing. And while they are too expensive to be used in bottomless mimosas (not even going to bring up how much I hate that...) they make for an amazing cocktail ingredient.
