“The Old Port” - Ron Matusalem Gran Reserva, Punt e Mes, Crème de Cassis, Ardbeg 10 Yr. Islay Scotch, Black Walnut Bitters.
The concept of this rum forward sipper was based off of rum & wine cigarillos; Old Port being a flagship brand of them. Every single ingredient has changed in this drink since it’s original conception. It’s about finding the right balance and making the appropriate tweaks. Much like our restaurant a lot has changed over the years, it will be 4 already in late August. Reservations accepted; now open Tuesday through Saturday 5pm-Midnight. Still will never get a phone though lol.
• 50ml Dockyard Signature Blend
• 1/2 Fresh Lime
• 10-12 Mint Leaves
• 2 Barspoons of Brown Sugar
• Soda Water
- Slice the lime into quarters and add to a highball glass with the sugar.
- Muddle the lime and sugar to release the lime juice and dissolve the sugar.
- Tear the mint leaves and add to the glass and continue to muddle.
- Half fill the glass with ice, add the rum and stir well
- Add more crushed ice to fill the glass and give it one final stir before finishing with a splash of soda water
- Garnish with a sprig of mint and a lime segment
