TAG A FRIEND WHO WOULD LOVE THIS RECIPE 😍 ➡️ Roasted Veggie Salad ▶️INGREDIENTS: 1 red bell pepper, roughly chopped 1 lb butternut squash 1 lb Brussels sprouts, hulled and halved 2 tsp dried oregano 1 tsp salt 1 tsp black pepper 3 Tbsp. olive oil 4 oz mixed greens Avocado Dressing 1 avocado 1 small garlic clove Juice of 1 lime 1/4 cup olive oil 1/2 tsp salt 1/4 tsp black pepper ▶️PREPARATION: 1. Preheat oven to 400°F/200°C 2. In a large bowl, mix the butternut squash, bell pepper, Brussels sprouts, dried oregano, salt, pepper, and olive oil until the veggies are evenly coated. 3. Pour the vegetables onto a baking sheet in one even layer and roast for 40 minutes. 4. To make the dressing, place the avocado, garlic, lime juice, olive oil, salt, and pepper in a blender or food processor and blend until the mixture is light and creamy. 5. To assemble the salad, place a handful of mixed greens on a plate and top with the roasted veggies. It’s a great way to save time and money while staying on track with your health and fitness goals.⁣ ⁣ 🙅🏼‍♀️But it doesn’t work for my life!⁣ ⁣ I find that when I meal prep, the food I made 5 days ago no longer tastes good after sitting in the fridge all week.⁣ ⁣ On top of that, my food preferences change and I’m not down to eat the same foods over and over all week.⁣ ⁣ Also, Thomas and I like to cook dinner together several nights a week so prepping a week’s worth of meals at once would take away that experience for us.⁣ ⁣ 💡Instead, what works for me is cooking a dish that makes 4 servings each night so that it makes enough for Thomas and I to both get dinner and leftovers for lunch the next day.⁣ ⁣ When it comes to food, there is no one size fits all approach. I have actually liked this same meal combination for a couple of weeks now (though I know not everyone likes to eat the same thing). . . Breakfast: soft boiled egg + 1/4 avocado + sautéed kale and mushrooms + 1/2 English muffins. . . Lunch: grilled chicken thighs + chipotle butternut squash + black beans + salad greens + fat free feta cheese. . . Snack: banana + pbfit mixed with vanilla protein + kamut puffs + granola. . . I keep rice cakes and peanut butter in my desk for some extra snacking and every night for dinner have a protein with veggies for a salad or with corn tortillas. . . I make sure to have protein in all my meals and to eat a variety of veggies so that I can get all sorts of vitamins and minerals that my body needs! . . #thisisourcommunity #wholehuman #empoweredandeducated

Instead, when you think about working out, within 5 seconds you need to stand up and do something. A push up, a crunch, a video you e been avoiding. 💀You’ve got ( seconds before your brain convinces you that you can’t do it. Ahora lo importante: mirá lo que fue mi cena 🍽️ de ayer y lo que puede ser tu almuerzo de hoy porque se hace en 10 minutos 🕥... - Huevos (podés hacer: 1 huevos y una clara o 3 claras) - Relleno a elección (gracias a mi #mealprep tenía hecho puré de calabaza y salteado de vegetales) - Sal y pimienta a gusto 1. En un bowl, batí los huevos 🥚 con la sal y la pimienta. 2. Cociná 🔥 en una sartén engrasada por 2 minutos aprox de cada lado. Una vez que esté dorado 😍 de un lado, lo das vuelta y seguís dorando de otro. Ahí mismo lo rellenás. Para rellenar yo 🙋🏻‍♂️ usé puré de calabaza, cebolla común, cebolla morada, morrón rojo, morrón amarillo, zucchini y zanahoria...
