Week 4 lunch: 3 egg Veggie Omelette.
Serves one. Make 7 for a week
3 free range pasture raised eggs. (Local eggs to me)
Butter for the pan
A good big bunch of silver beat (I grew my own) fried in a pan until wilted
5 shallots finely sliced (grew my own)
8 banana chilli’s or 2 red capsicums diced (grown 5km away from me)
A big bunch of parsley chopped finely ( grew my own)
Salt and pepper to taste
18 cherry tomatoes cut in half. I used Black Russians that are grown only 5km away from me. IGA Young, love it. #superigayoung#
*Heat your frying pan up with a *little butter in it.
*In a small bowl crack 3 eggs
*Season with good salt and pepper
*In a big mixing bowl mix together the parsley, chilli and shallots.
*Add 3 heaped tbs of the parsley mix into the eggs and whisk till combined.
*Pour into your pan. (Tip: small pans work bed for this)
*On top of the frying egg mixture add a little wilted silverbeet 🥬 evenly not too much.
*Add in 5 is so of the tomatoe halves and cook with the lid on. Medium heat is best so it doesn’t burn the bottom. *When cooked through, slide out of the pan o to a plate and chop in 1/4.
Enjoy immediately or through out the week.
Store in air right containers.
I use @mishbridges meal prep containers. The lids are super tight, no leaking here. .
Not that complicated. Don’t overthink it. I did for a long time and I’m so happy to have found a program that works for me. A program that shows you how to eat that includes every food group. It’s a sustainable nutrition plan for life. Where I feel in control. Where I don’t regret indulging in treats when I want to “live life” because I know I put in the work 80% of the time to enjoy those moments. This mindset and lifestyle has been a game changer for me and I’d love for you to feel this way too. ❤️ . .
So I finaly did my meal prep yesterday! I can't do a week of a few days ahead. I like to make the food fresh fo rthe next day... that is just my personal preference. For breakfast i have my 2xboiled eggs with a little bit of mayo on a few provitas. #mealplrep#foodies#healthyfood#healthy2018

After some indulging yesterday I woke up literally craving some good, dense nutrition. It's amazing how our bodies respond when we go out of our normal routine..I'm tired, sluggish & I just feel cloudy today...I start my new country dance inspired program tomorrow with some friends so today will be spent meal planning and grocery shopping! 🙌🏻
