I really like ice cream (anything chocolatey or cakey too) ... Staying #glutenfree and #lowcarb has changed the way I eat & think about what I eat. That's not a bad thing - cutting out sugar. Since I couldn't find a low sugar ice cream that didn't cost a fortune, I made my own!
The recipe below fit in my 2 qt ice cream maker.
1 pint heavy whipping cream = 16 ounces
1 whole raw egg
2 TBSP sweetener (I used Stevia)
1 tsp vanilla extract (I used peppermint extract)
I also added about 1/3 cup of crushed dark chocolate chips.
Made these yummy pizza tostadas using @sietefoods cassava tortillas. They were so quick & easy to make👌🏻 perfect for a Friday night dinner
